Sardinian Gnocchetti Arrighi Mediterranean Style

Ingredients
(for 2 people):
180 g of Sardinian gnocchetti
2 medium courgettes
250 g of squid tufts
200 ml of homemade tomato puree (ideal with San Marzano tomatoes)
1 teaspoon of Taggiasca olive paté
2 tablespoons of extra virgin olive oil
1 clove of garlic
Salt to taste
Freshly ground black pepper to taste
Preparation
Prepare the courgettes: cut the courgettes into small pieces and brown them in a pan with extra virgin olive oil, a clove of garlic and a sprinkling of black pepper.
Add the tomato: once the courgettes are well browned, add the homemade tomato puree and season with salt. Leave to cook for a few minutes.
Cook the calamari: in the meantime, blanch the squid tufts in salted water with a spoonful of oil for about 10 minutes, without covering the pan. Drain them and add them to the sauce with courgettes and tomato.
Flavour: add a teaspoon of Taggiasca olive paté to the sauce and mix well, stirring occasionally to blend the flavours.
Cook the pasta: boil the Arrighi Sardinian gnocchetti in plenty of salted water. Drain them al dente and finish cooking them in the pan with the sauce, stirring for a couple of minutes.
Serve: Plate and add a grind of fresh black pepper before serving.
